Thai beef red curry

Red curry paste
1 tin of coconut milk
Beef (rump)
onion
garlic
chilli
capsicum
mushrooms
carrot
peas

This sounds a lot like how I make red curry. :) I have actually made the paste myself once (when I accidentally bought an excess of chilli and needed something to do with them all) but I wouldn't recommend it generally - it's fairly time consuming and fiddly. And it involves shrimp paste, which is just about the most disgusting but edible substance known to man.

    Broccoli (or broccolini - I like it better than normal broccoli) also works pretty well as a green vegetable in red curry.

  2. Broccoli(nni) sounds like it would be good with this, aye. A would bamboo shoots, green beans, etc. All of the veggies!

    I think next time I will try making this with half the suggested amount of coconut milk - it's pretty rich stuff. Ever tried to make it a little lighter?

    The other thing I want to master is the panang curry, but that one is probably more complicated than curry paste + coconut milk + things.

  3. I don't usually put in a whole tin of coconut milk but not because it's too rich, more because there's just too much liquid. You can get "light" coconut milk but I have no idea what that means and have never particularly wanted to find out. Bamboo shoots would indeed be awesome - a lot of Thai restaurants put them in red curry. Not actually sure where to buy them though; you could probably get tinned ones I guess.

  4. Coconut milk is literally just shredded coconut + water + heat that has been strained of solids. Coconut cream is just coconut milk with less water. One presumes light coconut milk is just going in the opposite direction. I might experiment with buying coconut cream and just using a few dollops.

    Don't get it confused with cream of coconut, though, which is horrible sickly sweet muck used in bad piña coladas.
